Simply delicious! The perfect holiday cookies to make and share this season

Did you miss out on Berwick by the Sea’s special ‘Cookies in a jar’ food bank fundraiser this year? The good news is that you can still enjoy their best-selling ‘Cookies in a Jar’ recipe!

Their delicious Chocolate Peppermint Cookies were all the rage this past November and the Campbell River seniors encourage everyone to give these tasty treats a try over the holiday season!

“These cookies are so easy to make, they’re the perfect cookies to make with children or grandchildren over the holidays and enjoy together as a family!” says Berwick’s Community Relations Manager Loren Butler. “We hope everyone enjoys this recipe as much as we have and shares it with their own loved ones.”

Chocolate Peppermint Cookies

Recipe

  • 1 and 1/2 cups (188g) all-purpose flour (spooned and levelled)
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup (21g) unsweetened natural cocoa powder
  • 3/4 cup (150g) packed light or dark brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (90g) semi-sweet chocolate chips
  • 1/2 cup (90g) chopped peppermint bark
  • 10 Tablespoons (145g) softened unsalted butter
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

Each recipe yields two-dozen cookies and will stay fresh in an airtight container at room temperature for up to one week or frozen for three months.

  1. In a large bowl, beat the butter, egg and vanilla extract together on high speed until combined (if the egg isn’t fully combining with the butter, it will when the dry ingredients are added).
  2. Next, lightly mix the dry ingredients in a separate bowl before adding it to the wet ingredients on a low speed until combined.
  3. Once combined, drop rounded tablespoonful scoops onto parchment paper about three inches apart. Bake at 350°F for 10 minutes or until the edges are set.
